Dark chocolate cookie dough bites

#
4 ounces cream cheese, softened
3 tablespoons butter, softened
1/4 cup granular erythritol
1 drop liquid stevia
3 tablespoons almond flour
1/4 cup stevia sweetened dark chocolate chips or the equivalent dark chocolate bar chopped.
Use a spoon to thoroughly mix all ingredients. Drop small scoops on parchment paper and freeze for at least 2 hours.
TIPS-*you can drizzle with more melted dark chocolate
*Store in freezer *I use kerrygold grass fed butter because the flavor is the best.

Bunless grilled burger & Loaded Roasted Cauliflower

1 medium head cauliflower, cut small pieces
1 tablespoon avocado oil
pink himalayan salt
4 slices bacon (uncooked), chopped
1 green onion, diced (extra to garnish)
1 cup shredded sharp cheddar cheese

Preheat oven to 400 degrees and cover a sheet pan with parchment paper.
Toss cauliflower with avocado oil and spread on sheet pan. Sprinkle with salt. Add bacon and green onion to pan

Bake for 25 minutes. Take out of oven and add cheese, bake 5 more minutes. Garnish with more green onion.

Pecan candied bacon

8 – 10 slices thick cut bacon
1/2 cup chopped pecans
1/4 cup granular sweetener
1 teaspoon sf maple syrup
2 egg whites

Preheat oven to 375 degrees.
Put bacon on a parchment lined baking sheet. Bake for 10 minutes and drain grease. Mix pecans, sweetener, maple and egg whites until the mixture is frothy. Evenly spoon pecan mixture on each bacon slice. Bake for 20-25 more minutes or until golden brown and crispy. Check it often toward the end. Drain on paper towels. It will crisp more as it cools. **baking time will vary depending on the quality and how thick your bacon is. **I used Lakanto maple flavored syrup. **Whatever sweetener you use make sure it’s granular to get the right consistency.

Cheesy Baked Taco Dip

When it comes to cooking I love when something I didn’t really plan turns out great. For instance, this taco dip. I had a different plan and it didn’t work out. My daughter requested queso dip for her birthday party. I normally make the dip in a slow cooker. Long story short I didn’t have the slow cooker that I normally use for the recipe. At the last minute I decided to make a baked cheesy dip and this recipe was born. It was a big hit at the party and was quickly demolished! I made another pan of it midway through the party. That shows how easy it is too!

I serve this delicious dip with celery, mini peppers, cucumbers and pork rinds for dipping. You can also garnish it with your favorite toppings such as lettuce, tomatoes and avocados.

 

Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 10 oz can Rotel diced tomatoes and green chiles
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese divided

Instructions

  • Preheat the oven to 350 degrees.  Grease a 8 x 12-inch baking dish.
  • Cook the ground beef in a 12-inch skillet over medium heat, crumbling the meat as it cooks, until it is browned.  Drain the fat, if necessary.
  • Add the taco seasoning, Rotel, sour cream and 1 cup of cheese to the ground beef.  Stir until well blended.
  • Spread the dip evenly in the greased baking dish.  Top with remaining cup of cheese.  Bake for 20 minutes, until the cheese is melted and the dip is bubbling around the edges.

Pork Pot Stickers

INGREDIENTS

Pot Sticker Filling – I used Epicurious.com‘s Pork Pot Stickers recipe, link below

  • ¼ small head Napa cabbage, finely chopped (about 2 cups)

  • 1 teaspoon of kosher salt

  • ⅓ pound ground pork (I used 80/20)

  • 1 tablespoon fresh ginger, minced

  • 2 tablespoons carrot, minced

  • 2 scallions, thinly sliced

  • 2 cloves garlic, minced

  • 1 tablespoon soy sauce (or liquid or coconut aminos)

  • 2 teaspoons sesame oil

  • ½ egg, lightly beaten (the other ½ will be used for sealing the potstickers)

Wrappers and Frying

  • 2 sheets of Cut Da Carb Flatbread (see pictures below on how to cut)

  • 1-2 tablespoon of oil for frying (I use avocado oil)

  • ¼-½ of water, depends on whether you cook all your pot stickers in one batch

Dipping Sauce

  • 2 tablespoons of soy sauce (or liquid or coconut aminos)

  • 1 tablespoon of rice vinegar

  • 1 teaspoon of sesame oil

  • 1 scallion, thinly sliced

  • red pepper flakes

DIRECTIONS

  1. In a bowl, combine all of the pot sticker filling ingredients – the Epicurious.com recipe instructions include salting the cabbage, but I had no issues with too much moisture in the filling.

  2. Place a spoonful of filling on the Cut Da Carb strip and fold the pot stickers as shown below- use the remaining egg to seal your pot sticker

  3. Heat 1 tablespoon of oil over medium heat in a large skillet – you’ll need a skillet that has a lid!

  4. Place the pot stickers seam side down and cook for 2-3 minutes until lightly browned

  5. Pour ¼ cup of water into the skillet and cover

  6. Allow pot stickers to steam for 6 minutes – this will allow the filling to cook and the bottoms will continue to brown

  7. Remove the lid and turn the pot stickers over and continue frying until crisp

  8. Combine all of the dipping sauce ingredients in a small bowl

  9. Serve the pot stickers with dipping sauce while hot to ensure maximum crispiness.

Keto Ferrero Rocher

Makes 15 Pieces (that’s what I got, you may get more or less depending on how big you make them)

INGREDIENTS

  • 1 cup of Keto Oreo Cookies, chopped with a knife – you want to be able to “crunch” these when you chew (You don’t NEED the dark cocoa for this. I made half of gnom-gnom’s recipe and had leftovers. If you’re just using these Oreos for this recipe, there’s no need to make pretty little circles, just roll the dough out into a thin layer and cut squares out of it)

  • 1 cup of Keto Nutella Spread (half of gnom-gnom’s recipe, I also added a couple drops of liquid stevia because it wasn’t quite sweet enough for my taste)

  • roasted hazelnuts, enough for each candy center

  • 1 cup Lily’s Dark Chocolate Chips

  • 1 teaspoon of coconut oil (I like refined coconut oil because it doesn’t add a coconut flavor)

  • ¾ cup of hazelnuts, chopped

DIRECTIONS

  1. Mix the “Oreos” with the “Nutella” and place in the fridge for 20-25 minutes. This needs to be chilled so that you can form it around the hazelnuts.

  2. Line a plate or tray with parchment paper.

  3. Wrap a spoonful of the Oreo/Nutella filling around each hazelnut and place on the parchment lined plate.

  4. Freeze the prepared balls into the freezer for 15-20 minutes while you prepare the chocolate coating

  5. If you know of a better way to do it, please do your way. Otherwise this is what I did for the chocolate coating – Add chocolate chips and coconut oil to a small bowl and microwave for 30 seconds, stir, then microwave in 15 second increments until smooth and melty. Add the chopped hazelnuts and stir thoroughly.

  6. Dip each ball into the chocolate coating (or just drop the ball into the bowl and spoon the coating over it) and return the coated balls to the plate lined with parchment paper.

  7. Place the prepared chocolates into the fridge to harden. I left mine in for about half an hour.

  8. I had a little leftover chocolate coating so I poured that into mini muffin cups to enjoy later.

  9. Store in the refrigerator

Just like “Buttermilk” Pancake Mix

If you are looking for a yummy, low-carb & keto pancake option, this is it! I developed this pancake recipe after trying so many out there and not being satisfied with any of them! Even my non-keto family members love them!

THE PANCAKE : moist, fluffy, thick, mildly sweet, and they are reminiscent of traditional “buttermilk” pancakes! If made according to instructions, each pancake is only about 0.6 NET CARBS.

WHAT’S INCLUDED : a bag of DRY pancake mix, that makes TEN pancakes that are 3.5″ round.

WHAT YOU’LL NEED TO ADD : eggs, water, and sour cream.

Bacon and Brie Cups with Sugar Free Pumpkin Spiced Pecans 🥓🧀🍁

Bacon Cups:
Take 1 pack of bacon and cut strips into three pieces. Lay 2 strips in 24 mini muffin tin cavities. Bake at 425 for 12-15 mins 🥓

Sugar-Free Pumpkin Spiced Pecans:
Toast 1 cup of pecans in a pan over medium heat until fragrant add 1 tbsp of butter, 1tsp of pumpkin pie spice and 2 tbsp sugar substitute (or a few dashes of pure powdered stevia extract like I did to keep it DSK friendly) and mix until pecans are well coated, remove from heat 🍂

Preheat oven to 350 and top bacon with a small cube of brie and a candied pecan and bake until cheese is melted
