KETO PIZZA DOUGH

This is the best pizza you’ve had since starting keto, I’d bet money on it! Very easy to make and the dough recipe can be used for anything else you would use a fathead dough for. Its fluffy and delicious and can be seasoned sweet or savory. But hold out for the end to get that buttery **Dominos-esque** garlic bread crust! You’re gonna die, its amazing.

Ingredients:

2.5 Cups mozzarella cheese

1 Cup almond flour

2 tsp baking powder

1 tsp xantham gum

2 eggs

Directions:

-preheat oven to 350

-microwave the mozzarella for 1 minute. Stir.

-add almond flour, xanthan gum and baking powder and combine as best you can.

-add 2 eggs and mix until all blended.

-microwave 30 seconds. Should get more fluffy. Stir again.

-Roll out or flatten with hands into the crust shape you want.The dough will be very sticky. It is important to use parchment paper or a baking mat to prevent sticking.

-Poke holes in the crust with a fork. Cook for 12-13 minutes at 350.

-Brush the crust with butter and top with a garlic salt seasoning. Add sauce and toppings and broil until melted on low.

a cauliflower crust pepperoni pizza!

Made a cauliflower crust pepperoni pizza! 🍕

Crust ingredients: (Preheat oven to 450)
-microwave 1 cup of riced cauliflower for 4-5 minutes.
-mix in 1 egg
-1/2 cup of grated Parmesan cheese
-sprinkle of salt -dash of Italian seasoning. -1 tsp minced garlic
Have parchment paper ready on a pan. I coated mine with olive oil to reduce sticking. Smooth dough into a round 9 inch circle. Cook for 15 minutes at 450. Remove and add your favorite toppings. I broiled mine on high to melt the cheese. Also I topped with fresh basil before eating. .

LOWCARB FRENCH TOAST

I get to have french toast this delicious and still lose weight⁉️ #mindblown
For those of you who are having trouble giving up all of your old favorite dishes, here is a recipe that will help you cope💕 Introducing #lowcarbfrenchtoast that hit the spot even the next day when I reheated it 🚨EAT RESPONSIBLY🚨

➡️Ingredients for Egg Loaf
8 eggs (room temperature)
8 oz of cream cheese (room temperature)
4 tbsp of grass fed butter (room temperature)
1 tsp vanilla extract
6 tbsp coconut flour
1 tsp baking powder
1 tbsp heavy cream
Cinnamon and pumpkin spice (not measured, use as much as you prefer) ➡️Instructions for Egg Loaf
1: Melt your butter
2: In a large bowl mix all of your ingredients together, including your melted butter (I prefer to use an electric mixer, however, you can also use an immersion blender or toss them in a regular blender)
3: Pour the well mixed batter into your parchment lined loaf pan
4: Bake for 35 minutes at 350 degrees
5: Let it cool for at least one hour
6: Cut 2 1/2 inch thick slices once your loaf has cooled off ➡️Ingredients for French Toast (for the entire egg loaf)
3 large eggs
3 tbsp heavy cream
1 tbsp vanilla extract
1 1/2 tbsp cinnamon
20 drops of liquid Stevia
3 tbsp of butter for cooking ➡️Instructions for French Toast
1: Cut 2 inch thick slices
2: Beat together all ingredients except the butter until well mixed
3: On medium heat temperature, heat all of your butter in your nonstick pan on medium heat and dip each pieces of bread stick into your batter (make sure all sides get wet) and place it directly onto the hot skillet
4: Top it with berries, keto whipped cream, and/or sugar free syrup and ENJOY every single #guiltfree bite‼️

JICAMA FRIES

One thing I really miss life pre-Keto are fries! I discovered Jicama fries a few days ago and it changed my world!!! Jicama is a healthy source of carbohydrates. 1 cup will cost you about 5 net carbs so eat cautiously! Because of the high fiber content in Jicama (6 grams per cup), it’s considered a low Glycemic food, which means that it will have very little effect on your blood glucose. I cannot believe it took me this long to make them

Jicama Fries can be the perfect side dish or snack! Here is how to make them‼️
➡️Ingredients
1 large Jicama
2 tbsp avocado oil
Avocado oil spray or olive oil spray
Seasoning (not measured): onion salt, smoked paprika, cayenne pepper, chili lime, tajin, cumin
➡️Instructions:
1: Preheat your oven to 400 degrees
2: Rinse and peel your Jicama. Carefully slice them into your preferred size and width (keep in mind that the thinner the “fries”, the faster they will cook)
3: Boil your Jicama for 10 minutes. Make sure to add a pinch of Himalayan salt to your boiling water
4: Pat down your Jicama fries and toss them in a large bowl. Coat them with the avocado oil and all of the seasonings – mix well
5: Spread fries evenly onto pre-sprayed pan
6: Bake at 400 degrees for 30-33 minutes until golden. Make sure to toss them half way through (you can also air fry them for 15-17 minutes at 400 temperature)
7: Enjoy with a side of Keto friendly Aioli or Ranch 💚

KETO CHICKEN-SALAD

I have a batch ready to go at any point. This #keto #chickensalad is the perfect lunch to go. I eat it either alone, with a #lowcarb wrap or with low carb thins and they never seem to disappoint anyone that tries it 💚
Ingredients⬅️
1 pound of rotisserie chicken chopped into small tiny pieces
1/8 cup of fresh dill finely chopped
4 tbsp Dijon spicy mustard
1 tbsp of fresh squeezed lemon juice
1 tbsp of apple cider vinegar
1/2 tsp of fresh ground pepper
1/2 tsp of Himalayan salt
1/2 tsp of paprika
1/2 tsp of chili powder
1/4 cup chopped pecans (unsalted)
3/5 cup sir kensington avocado mayonnaise
4 stalks of green onions chopped into small pieces
4 stalks of celery chopped into small pieces
4 oz. of chopped pickles
Directions⬅️
Mix all ingredients in a large bowl. Cover the mixing bowl with plastic wrap and refrigerate for 1-2 hours for best taste💥

Zucchini pancakes

Introducing the perfect side dish for your next gathering, OR even perhaps the perfect lunch idea‼️ These Zucchini pancakes / fritters are ONLY 2 NET CARBS per each fritter (without sauce)💚 I eat these with homemade Tzatziki sauce, but you can pair it with whatever low sugar #ketofriendly sauce you prefer.

Ingredients⬅️
3 medium size zucchini (2 cups or so grated)
3 eggs
1 tbsp minced garlic
1 1/4 cup grated mozzarella cheese OR grated pepper jack cheese (I use pepper jack because I like a bit of a kick to it)
3 tbsp coconut flour
Not measured: onion powder, fresh ground pepper, and paprika
Avocado oil for frying

Directions⬅️
1: Grate zucchini. Toss about 2 tsp of Himalayan salt all over your grated zucchini and place it on a strainer. Let it sit for about 10 minutes in the strainer. With your hands squeeze the grated zucchini about 4 times until most of the excess water releases
2: In a large bowl mix your eggs, garlic, paprika, cheese, coconut flour, ground pepper and onion powder together. Once mixed well add your grated zucchini, then mozzarella cheese
3: You will need about 4 tbsp of avocado oil on a medium temperature non-stick pan. Allow for the oil to heat up before proceeding (about 3-4 minutes)
3: Spoon about 8 large sized balls on to the pan (work in batches of 4 if your pan is not large enough). Flatten them out using a fork/small spatula and make sure to shape them into round circles
4: Cook them on each side for about 5 minutes per side (until golden color and crispy). Make sure to have an eye on them so they do not burn
5: Enjoy these fritters with a side of Tzatziki sauce, marinara sauce, spicy aioli, or whatever other #keto dipping sauce you prefer!

Keto Lasagna

For 6 servings

Ingredients

Lasagna sheets

  • 8 eggs, beaten
  • 10 oz. cream cheese
  • 1 tsp salt
  • 5 tbsp ground psyllium husk powder
Meat sauce

  • 2 tbsp olive oil
  • 1 yellow onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1¼ lbs ground beef
  • 3 tbsp tomato paste
  • ½ tbsp dried basil
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ½ cup water
Cheese topping

  • 2 cups crème fraîche or sour cream
  • 5 oz. mozzarella cheese, shredded
  • 2 oz. parmesan cheese, grated
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ½ cup fresh parsley, finely chopped

Instructions

Lasagna sheets

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a medium sized bowl, whisk together the eggs, cream cheese and salt until it becomes a smooth batter. Gradually whisk in the psyllium husk, and then set aside for a few minutes.
  3. Add the batter to the center of the parchment paper, and then place another parchment paper on top. Flatten with a rolling pin until the batter is at least 13”x 18.” If you prefer thinner pasta, you can divide the batter into two equal batches, placing on two baking sheets with parchment paper.
  4. Bake each sheet (with parchment paper) for about 10-12 minutes. Set aside to cool. Next, remove the paper and slice pasta into sheets that fit a 9×12” baking dish.

Meat sauce

  1. In a large pan, over medium high heat, warm the olive oil. Add the onion and garlic, stirring until soft. Next add the beef, tomato paste and spices, and combine thoroughly, until the beef is no longer pink.
  2. Add water to the mixture, bring to a boil and then lower the heat, and let simmer for at least 15 minutes or until most of the water has evaporated. Since these lasagna sheets don’t soak up as much liquid as traditional ones, the sauce should be on the drier side. Set aside.
  3. Preheat the oven to 400°F (200°C). Grease a 9×12” baking dish.

Cheese topping

  1. Mix the mozzarella cheese with sour cream and most of the parmesan cheese. Reserve two tablespoons of the parmesan cheese for final topping. Add salt and pepper and stir in the parsley.
  2. Alternately layer the pasta sheets and meat sauce in the baking dish, starting with the pasta, followed by the meat sauce.
  3. Spread the cheese mixture on top of the pasta, and finish with the extra parmesan cheese.
  4. Bake in the oven for about 30 minutes or until the lasagna has a nicely browned surface. Serve with a green salad and your favorite dressing.
